Birch sugar (Abedulce) is found naturally in birch bark in high concentrations. Its active ingredient is xylitol, or pentapentol, and the human body even produces a certain amount (5-15 g) daily to aid metabolism. This substance was discovered over 100 years ago by a German chemist named Emil Fischer, who received the Nobel Prize in 1902.

However, birch sugar didn't gain attention until much later in Finland. During World War II, there was a shortage of white sugar in the country, and to supply the population, they began producing sugar from birch trees. In fact, this product is widely used in Scandinavian countries, as its unusual properties were already known. In Germany, it was widely used in diabetic and alkaline diets, but was later replaced by artificial sweeteners despite its benefits, due to its high production cost.

Its use has recently become popular again thanks to the health benefits of its regular consumption:
